The compartment sink, pot washing and dish scraping sinks are some
primary sources of FOG (fat, oil & grease) in a food preparation or kitchen facility. Grease can cause clogs and
damage to pipes, lift stations, septic fields and waste water treatment centers. FOG needs to be stopped in the grease

HRM pollution control BI-LAW W-101 states the effluent leaving
your facility is supposed to be 150ppm FOG. In a standard grease trap, the water drags grease with it when it flows through
the trap. You are probably not in compliance!
Fines are steep and can be hundreds of dollars for each
offence plus court fees. But look out, they aren't done. If a clog in the city pipes near your restaurant is because of
grease, you guessed it, the bill is yours!!! It can cost tens of thousands of dollars!
But its not all doom and gloom. Your creating grease that is useful. So lets complete the cycle. "Big Dipper" and
"Trapzilla" both separate FOG so efficiently, it can be recycled as Bio-fuel and fuel pellets!
If we all work together, we can achieve marvelous things.
